The sweet muscatel wine from Malaga is an authentic Andalusian jewel that captures the sun and the history of our land. Perfect for visitors looking for more than just a tapa: a unique sensory experience.
Origin and tradition. Moscatel de Málaga has ancient roots, dating back to Phoenician times, but its splendour came with the Arabs who perfected the «asoleo»: Moscatel de Alejandría grapes spread out in the sun in the Axarquía to concentrate natural sugars. Today, under the Málaga and Sierras de Málaga DO, it is produced in mountain vineyards near the centre, such as in the wineries of the capital or Cómpeta.
How it is made. This is no ordinary fortified wine: the grapes are sun-dried for 7-15 days, pressed and fermented briefly, remaining sweet by natural detention (no alcohol added). Result: a golden nectar, between 15-20% alcohol, with aromas of orange blossom, honey, citrus and sultanas. The «dry» versions age in oak, gaining toasty complexity.
Flavour profile. Fresh and unctuous on the palate, with balanced acidity that avoids cloying. The young wines are floral and fruity; the older ones are intense with notes of figs and caramel. Serve at 6-8°C in a white glass to appreciate its brightness.
In our centrally located bar, guided tastings on Fridays highlight these combinations, just steps from the Cathedral.
